OMG Pancakes!

I've been making variations of this classic pancake recipe for over a decade! My kids love it and it's a great way to trick them into starting their day with a delicious breakfast that is also super healthy. These pancakes provide lots of nutrients from the whole food ingredients, plenty of fat for energy, and a good dose of protein for strong bodies WITHOUT a butt load of sugary carbs.


...and on competition days, these are a staple in my game-day gym bag. Easy to digest, sustained energy, and no reactive hypoglycemia from wild blood sugar swings. Yum!


The basic recipe has 5 main components (1) 4 whole eggs (2) 1/2 cup something thick and full of fat (3) 1/2 cup mashed up fruit (4) a scoop of protein powder (5) 1 tsp baking powder. The flavor combinations are endless (I'm working on perfecting a savory version!), but here are some of my favorites:


4 Whole Eggs

+

1 of:

- 1/2 Cup almond butter or

- 1/2 Cup Peanut butter or

- 1/2 cup 11% fat greek yogurt or

- 1/2 cup softened cream cheese

+

1 of:

- 1 medium banana or

- 1/2 cup unsweetened apple sauce or

- 1/2 cup pureed pumpkin or

+

1 Scoop (34g) protein powder

- BRIO+ Whey Protein Power (cinnamon swirl or salted caramel)

+

1 tsp baking powder

+

Optional Spices


Instructions: whisk the wet ingredients together (first 3 items) then add the protein powder, baking powder, and optional spices. Stir until well combined, but don't overdo it.


Pour onto a well buttered griddle (or pan) and med-low heat. Flip when the bubbles that rise to the surface start to pop.

 

Pumpkin Spice Pancakes

This version holds up well for use in the waffle maker and is also dairy free.


4 eggs

1/2 cup almond butter

1/2 cup pureed pumpkin

1 tsp baking soda

1 tsp pumpkin pie spice



 

Pumpkin Pie

This version is low in oxalates (no almond butter), but does contain dairy. It's also school lunch box friendly! I will sometimes make mini pancakes and send them in my son's lunch along with a container of real maple syrup for dipping and a side of breakfast sausages.


4 eggs

1/2 cup softened cream cheese

1/2 cup pureed pumpkin

1 tsp baking soda

1 tsp pumpkin pie spice




 

Apple Cinnamon

This was the original, classic version of OMG Pancakes!


4 eggs

1/2 cup peanut butter

1/2 cup unsweetened apple sauce

1 tsp baking soda

1 tsp cinnamon

 

Peanut Butter Banana

This version contains the most carbohydrate, and is suitable only for very active kids or a meal right after a tough workout.


4 eggs

1/2 cup peanut butter

1 medium banana, mashed

1 scoop (34g) BRIO+ Protein Powder

1 tsp baking soda
